Natural wine enthusiast to host a special evening at Bell’s Diner – October 25th

Chris Wicks, chef/patron of Bell’s Diner in Montpelier, Bristol, has invited natural wine lover, Trevor Vibert, to host an exclusive natural wine dinner in Bristol…

The evening on 25th October 2011, will start with an introduction to the natural wine movement by Trevor Vibert and canapés served with a glass of Cerdon Bugey “methode ancestrale”, followed by an informal discussion about the differences between natural wines and industrially produced wine.

Chris Wicks has designed a bespoke five course meal, which perfectly complements each of the wines. The fish course will be a scallop with seaweed, cucumber, fennel & spring onion which is paired with Brézèm domaine de pezgaud vieille serine 2008. And Domaine lucci pinot noir 2010, from the Adelaide hills, is perfectly suited for the rabbit with carrot, sweet corn, damson & ginger.

Trevor will talk about the pairing of each course and there will be the opportunity for guests to ask questions, in this intimate setting for only 40 people.

Chris Wicks is widely known to be a passionate advocate of natural and biodynamic wine and believes that this holistic method of growing creates the best tasting and cleanest wines, which are quite simply better for health.
Trevor Vibert comments;

“I have been a fan for many years and have now reached a state where I find it very hard to drink anything but natural wine.”

Natural wine making uses age old techniques such as manual labour in the vineyard, combined with organic fertilisers and respect for the natural eco systems. The process of vinification uses naturally occurring yeasts and absolutely minimal intervention, avoiding chemical and mechanical procedures that standardize taste and strip the resulting product of its life and vital essence. The result is wine that is not homogenized. Each bottle needs to be judged on its own specific merits, as with a fully natural process there will of course be variations between the different vintages, and even between different bottles from the same vintage.
