Next week, Pho, the Vietnamese street food restaurant founded by husband and wife team Stephen and Jules Wall, will open its doors in Bristol at 28 Clare Street. The couple were inspired to open the UK’s first specialty pho restaurant after quitting their jobs, travelling around the world, and falling in love with Vietnam’s national dish: pho.

On Thursday, 28th April, the restaurant will be giving away free pho all day – from midday until close, or while ‘stocks’ last, to celebrate its opening day.

Pho is a nutritious and aromatic rice noodle soup, and the menu features more than 15 different kinds from the popular spicy brisket beef pho to the traditional chicken pho. All of the phos at Pho are served with plate of fresh herbs on the side to add as you please – this is an essential part of tailoring the dish to one’s own personal tastes. Pho’s broths are made daily in the restaurant by slowly simmering bones for at least 12 hours, and it’s this authentic preparation that is key to the soup retaining all its goodness and developing its own distinctive tastes and aromas.

The rest of the menu at Pho is made up of healthy Vietnamese street food-inspired dishes including spring and summer rolls, salads, wok-fried noodles and fragrant curries, as well as Vietnamese beers, cocktails, coffees and fresh juices. The majority of the food at Pho is suitable for many different diets, including gluten-free, dairy-free and vegetarian.

Pho has also been working with local company Tomorrow’s People to train and hire young people who live in and around Bristol that were previously out of work and / or are newly out of school without proper job training or qualifications. The restaurant has hired 4 local young people to work on the floor and in the kitchen, and it plans to continue recruiting locally in partnership with Tomorrow’s People.

The new Pho restaurant in Bristol will seat about 70 people for eat-in and will offer Pho To Go.
